Ingredients

1 large Onions, chopped
2 clove Garlic
1/2 Tbsp Canola Oil
1 lb Ground Beef (extra lean)
1.5 c Campbells vegetable broth no salt
2 Tbsp Sri Lankan Roasted Curry Powder homemade, or any other
1 Tbsp Cornstarch
6 cups/ 6 heads baby Bok Choy, sliced
Tips
Original also had chopped potato (cook before beef until crispy) and some people used carrots. Had peas (add at the end) but I used bok choy instead. Also had turmeric and cumin and used beef broth. I was avoiding a salted broth. I subbed my homemade curry powder but can use store bought.
Directions
Saute onion and garlic on oil in a large pan.
Add beef and cook, stirring, till cooked through.
Stir in seasoning.
Mix together broth and cornstarch then add to pan and cook down a little. Add Bok Choy and continue cooking until greens are wilted and tender, and sauce is thickened.
Serving Size: Makes 4, 1.25 c servings
