Ingredients

    1/2 cup dannon light and fit vanilla yogurt
    3/4 cup sugar free maple syrup
    2 egg whites
    1 cup whole wheat flour*
    1 cup flour
    1 tsp. baking soda
    1 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1/4 tsp. salt
    1 cup grated zucchini
    1 cup oatmeal
    1 cup raisins

Directions

Instructions: Preheat the oven to 375. Cream together the shortening and honey. Then add the egg and beat well. Stir together baking soda, cinnamon, nutmeg, and salt. Add this mixture alternately with the zucchini to the egg mixture. Stir in the oatmeal and raisins. Drop by teaspoons onto greased cookie sheets. Bake for 10 to 12 minutes.

    Incredible!
    The cookies were so yummy! I didn't have rolled oats and had to cheat a little by using one packet of Quaker maple and brown sugar lower sugar packet. The cookies turned out great! I do suggest putting the cookies in a sealed container to store, they tend to really harden up if left out. Thanx! - 9/23/09
