Number of Servings: 48

Ingredients

    4.5 c whole wheat flour
    2.5 c splenda
    1 tbsp baking powder
    1 tbsp baking soda
    dash of salt
    1 tbsp Ground Cinnamon
    .5 Tbsp Ground all spice
    1/2 cup of Unsweetened Coaco
    2 cups Unsweetened apple sauce
    1/2 cup canola oil
    6 eggs
    3.5 c shredded zucchini
    2.5 cups crushed pineapple w/out juice
    1 cup shredded sweetened coconut
    3 tsp vanilla extract

Directions

combine all dry ing. in one bowl
combine all wet in another bowl
gently fold wet ing into dry just until all blended
spoon into greased muffin pan 2/3 full
bake on 325 for 20-25 min done when toothpick comes out clean.

Cool on rack

    Goodness! Are you cooking for thrashers? It`s just the two of us. Sounds good but I would have to divide by four or clean out the freezer to make room. Do they freeze well? Momita3 - 7/26/09
