Ingredients

1.5 package (10 oz) Spinach, fresh
    3 oz Tomato, grape (3oz = appro 12 tomatoes)
2 stalk, small (5" long) Celery, raw
    1 cup, chopped Carrots, raw
5 serving Dole Mandarin Oranges No Sugar Added
    15 tbsp Emerald Glazed Pecans

Tips

You can mix this up by adding a variety of lettuces if you don't like spinach.

Make sure that you add the oranges last so that they hold their shape. When storing leftovers, drain out any extra juices; otherwise the salad will be soggy the next day.

Directions

Mix all ingredients except oranges. You can add whatever vegetables you would like.

Drain oranges well and add to salad. Gently mix.

Add whatever dressing you would like; however, I have found that there is enough juice from the mandarin oranges to give you a "dressing".
