Introduction

This is very tasty..but I modified the recipe from cooking club mag. It needed better spices and more sauce to make it moister... so I added more ketchup into the recipe they only provided 4 tbsp for top of each muffin.
To start shred carrot and zucchini and chop chives, only green part. I am making this low Fodmap. Set aside all measuring tools and ingredients to make easier. Only use 6 tbsp of Ketchup in the recipe and other for the top of muffins before you cook. The recipe only called for thyme which I don't like so I added others and a little bit of it. You can adjust to your likes. ENJOY!

Ingredients

    16 oz Ground beef, extra lean (15% fat) pan broiled
    6 serving ketup (by MOON290309)
    1 cup, grated Carrots, raw
    16 tbsp chopped Fresh Chives
    1 cup, mashed Zucchini
    .75 cup Quaker Oats Gluten Free
    1 large Egg, fresh, whole, raw
    2 large Egg white, fresh
    6 serving ketup 1 TBSP (by GLITTERGIRL69)
    4 tsp Lea & Perrins, Worcestershire Sauce
    2 tsp Grey Poupon Dijon Mustard
    1 tbsp Spice, Parsley (dried) (by RAMIREZJR78)
    .165 tbsp Basil
    .5 tsp Thyme, ground
    .5 tsp SPICE - Pepper, Black, Ground (Google) (by CRAIGCANCHANGE)
    .5 tsp Salt

Tips

This is a lot of shredding and chopping so get ingredients/ tools ready so you can make fast. I did all the chopping night before and measured all ingredients so it was fast. It will smell of your home with welcoming Aromas.


Directions

Heat oven to 350 F. spray muffin tins or a 8 x 4 loaf pan with safe cooking spray. Gently combine all ingre. expect the other 6 tbsp of ketchup .Press firmly into muffin tins. spread with remaining ketchup. Place in oven for 1 hour and 20 minutes . I checked after an hour it needed the extra time. when internal temp is 160 it is done. let stand to cool sprinkle with additional pepper .
