Ingredients

4 cup Quaker Oats Old-Fashioned Rolled Oats
8 oz Fisher Naturals Walnut halves & pieces
0.50 cup Pepitas (Pumkin Seed Kernals)
.25 tsp Salt
1 tsp Cinnamon, ground
8 tbsp "LouAna" Pure Coconut Oil
4 oz Motts unsweetened Applesauce
1 tsp Vanilla Extract
0.50 cup Dried Cherries
Directions
Preheat the oven to 350 deg F. Line a baking sheet with parchment paper
In a large bowl, toss the oats, walnuts, pepitas, salt, cinnamon, and ginger.
In a large measuring cup, combine the coconut oil, applesauce and vanilla. Pour over the dry mixture and mix well.
Transfer the mixture to the prepared baking sheet. Cook for 30 minutes, stirring about halfway through. Remove from the oven and let the granola sit undisturbed until completely cool. Break the granola into pieces, and stir in the dried cherries.
Transfer to an airtight container and store at room temperature for up to 2 weeks.
