Introduction

Ingredients

    4- 6 oz Chicken breast, boneless,skinless (can use leftover grilled chicken)
    2 bags- "boil in bag "Whole Grain Brown Rice
    1/4-Small can Green Chilies, drained
    20 oz can Pineapple tidbits in juice, partially drained
    3 Plum tomatoes, chopped
    1/2 Onion, chopped
    1/2 Green or red bell pepper, chopped


Directions

Cut chicken breast in half. Grill or bake the chicken with your favorite dry seasoning. While the chicken is cooking, boil the rice according to the directions on the box. In a small bowl, mix pineapple, bell pepper, onion, chilies, and tomatoes. Assemble the dish (rice bed, then chicken and top with salsa.

Makes 8 servings of 3oz breast and 1/2 cup rice
