Ingredients

For the salad:
2 medium carrots, grated or in matchsticks
1 can Chickpeas
1.5 cup cooked Quinoa (0.5 cup raw)
1 small red onion
5-6 dates, chopped into small pieces
Optional: chopped parsley
For the dressing:
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp honey
1 dash Salt
0.5 tsp ground cumin
0.25 tsp chilli powder
Tips
Feel free to swap out ingredients based on your likes/dislikes.
Directions
Cook quinoa and allow to cool, then mix together with other chopped salad ingredients in a bowl.
Whisk up dressing ingredients (or shake in a small jar), then pour over the salad.
The dressed salad keeps well in the fridge for a couple of days.
