Ingredients

    2 cans black eyed peas, drained and rinsed
    1 can “shoepeg” corn or regular canned corn, drained
    1 can diced tomatoes, drained
    1 can mild green chilies, drained
    ½ red pepper, diced
    ½ yellow pepper, diced
    ½ c chopped green onions
    ½ c light Italian dressing (I used Just 2 Good or fat free)

Directions

Combine all ingredients in large container.
Refrigerate for 2 hours before serving.
Eat alone or use as a relish/dip.
Enjoy!

Makes 8 1/2 c servings.
