Introduction
If you need to throw something in the oven to go with supper then this is an easy fix and one you can personalize any way you desire. Add some veggies or different spices that you like and change them up. This recipe is basic, easy and should appeal to everyone in the family from young and up! Try BBQ dry rub, lemon pepper, Fajita season etc... for variety or one that goes with your main dish. Ingredients

3 medium (2-1/4" to 3-1/4" dia.) Potato, raw
1 tbsp Extra Virgin Olive Oil
1 tsp Kosher Salt (Season to taste.)
1/2 tsp Pepper, black (Season to taste.)
.5 tsp Paprika (Estimate, season to taste.)
.5 tsp Garlic powder (Estimate, season to taste.)
1 small Onions, raw
Tips
Well, I really wanted Scallaped potatoes but I also want to stay within an alotted calorie limit, so I settled on the next best thing! Serve with a dollop of sour cream, or a sprinkle of cheese, ketsup and BBQ sauce works too!
Directions
Lightly grease loaf pan.
Thinly slice the onions. (This is Key!)
Thinly slice the potatoes.
Place one layer of potatoes on bottom of loaf pan. Sprinkle with onion and spices. Repeat and add the olive oil in between a couple of the layers and reserve some olive oil and spices for the top. (This makes about 5 - 6 layers or so.)
Repeat
Bake 350 degrees for 40 minutes until potatoes are cooked through.
Serving Size: 4 satisfying servings.
