Introduction

Ingredients

    12 Corn Tortillas
    1 package sausage (I use Jimmy Dean Maple)
    2 cups shredded cheese
    2 cans of diced green chiles
    2 1/2 cups egg substitute

Directions

Preheat the oven to 350'. Brown the sausage. If needed, shred the cheese. Cut the corn tortillas in half. Spray a 9" x 13" glass pan. Line the bottom with four of the corn tortillas (eight halves), covering the entire bottom. Layer 1/3 of the sausage, cheese and chiles. Repeat layers until all ingredients are used. Pour the eggs over the layers. Bake for 45 - 60 minutes, until the center is set. Cut into twelve equally sized pieces. Serve with salsa and low-fat sour cream, if desired.
