Ingredients

    1 tsp Granulated Sugar
2.44 cup Flour - Gold medal all purpose flour
    1 tsp Granulated Sugar
    8.25 fl oz Water, tap
    8 gram(s) Yeast Dried (1 Tsp = 4grams) (by SIRIUSSUE)
5 tbsp Bob's Red Mill 100% Stone Ground Whole Grain Medium Grind Cornmeal (by STALEAN)
17 tbsp Crisco Pure Vegetable Oil
    800 grams Spinach, frozen
100 mL Half and Half Cream
3 large Egg, fresh, whole, raw
100 gram(s) Raclette Cheese (by _VALEO_)

Tips

I would add salt and pepper to the spinach while it is cooking.

Directions

Mix sugar, yeast and water to proof. Add flour, cornmeal and oil, mix for ten minutes and then let rest in an oiled bowl for 1-1.5 hours or until doubled in size. In the mean time, cook spinach, take from stove and add mixed eggs, cream and cheese. Mix well and let cool. When the dough is ready, spread it out in a cast iron 30 cm in diameter and pull the dough up the sides. Let rest for 10-15 minutes. Press dough up against the side walls and fill with spinach mix. Bake at 425F for 35 minutes.
