Number of Servings: 8


    1 tsp Olive Oil (to cook pasta)
    1 cooked container of Healthy Harvest Pasta, Rotini
    4 cloves roasted Garlic
    1/2 Yellow Pepper, finely diced
    1/2 Red Pepper, finely diced
    1/2 Green Pepper, finely diced
    1 stalk Celery, finely diced
    1/2 medium Purple Onions, finely diced
    1/2 cup Grape Tomatoes, cut in quarters
    2 boiled or grilled, boneless, skinless Chicken Breasts, diced
    1/4 cup grated Parmesan Cheese
    8 tbsps Kraft Real Mayo
    3 grams Tony Chachere’s Original Creole Seasoning
    3 dashes Salt
    3 dashes Pepper, fresh ground


Cook pasta with the tablespoon of olive oil until tender. While pasta cooks, cook chicken breasts and let cool then dice into bite-sized pieces.

Drain pasta thoroughly. Let pasta cool. While pasta cools, put mayo and garlic in a large bowl and mix well. Ad Tony Chachere's, salt and pepper. Mix well. Add drained, cooled pasta a little at a time, stirring with a rubber spatula and making sure coverage is consistent.

Add peppers, onion, tomatoes, stirring well after each.

Add diced chicken. Mix well.

Add Parmesan and mix well.

Chill thoroughly. The salad tastes best if you make it a day in advance and allow it to sit in the refrigerator overnight.

Serve with wheat crackers. Enjoy!
