Introduction

We raise our own tomatoes and I was going to have just the tomatoes in the oil & vinegar but decided to add celery and cook. Looking at my Nutrition Tracker I needed to add calories and protein. I thought, why not add a can of tuna and some homemade broth. Well, I liked it! And boy is it filling plus adds protein and about 4 veggies if each tomato counts as 1. Ingredients

    3 tomatoes diced
    1 Tbl Newman's Oil & Vinegar dressing
    1 C celery sliced thinly
    1 can tuna with the water
    1 C broth (I made my own but any broth would do)


Directions

Bring to a boil and simmer for about 5 minutes or until the celery is soft enough to comfortably eat. I ate it all as I only used 1 C broth. Very filling, quite tasty.
