Introduction

This salsa is chunky, tasty, and low in sodium. It's already hard enough to keep sodium levels under the 2300 mg max suggested by the experts. Number of Servings: 20

Ingredients

    16-18 plum tomatoes
    1 cup chopped white onions
    1+ cups cilantro (depending on taste)
    5 medium garlic cloves chopped small
    1 hot pepper of choice (i.e. jalapeno)
    1/2 tsp ground cumin
    1/2 tsp onion powder
    1/2 tsp garlic powder
    1/2 tsp Salt Sense (reduced sodium salt)
    1 tsp black ground pepper
    1/2 cup lemon juice

Directions

Chop all ingredients to desired size. The onion and tomato should be cut about the same size, while the garlic and hot pepper should be cut very tiny. For more spicy salsa, include the seeds from the pepper. Otherwise, discard the seeds and just use the pepper itself. Mix all ingredients and refrigerate 1 to 2 hours.

Makes 18-20 half-cup servings

Serve with Tostitos Restraunt Style LITE tortilla chips for a lower calorie/fat alternative to regular tortilla chips because they have 1 gram of fat for 7 chips, rather than 1 gram of fat for each chip!

    I was looking for cilantro at the store this week and they did not have any. Hoping to get it next shopping trip and then try this recipe. Been looking for a Low Sodium Salsa and I can't wait to try this. Thanks for Sharing - 4/5/17

    I will make this withoutcilantro--maybe use the fresh basil in our garden instead--gotta use up all the tomatoes in our garden and it's too hot to cook them! - 8/22/08
