Ingredients

    1 can black beans, rinsed and drained
    1 can diced tomatoes canned with peppers (Rotel), undrained
    12 oz chicken breast, boneless and skinless
    1 tbsp. dried oregano
    salt and pepper
    4 whole wheat tortillas
    1/2 cup sharp cheddar cheese, shredded

Directions

Combine black beans and salsa in a saucepan over medium low heat. Stir occasionally while preparing chicken.

Sprinkle uncooked chicken breast on both sides with oregano, salt, and pepper. In a nonstick skillet over medium, heat butter and oiive oil. When melted and hot, add chicken. Cook chicken over medium heat (5 minutes per side is an average time for a whole chicken breast) until cooked. Let chicken rest on cutting board for 2-3 minutes, to allow juices to redistribute, then slice across the grain. Heat tortillas briefly. Drain tomato-bean mixture and divide among the four tortillas. Divide chicken and cheese also equally among the four tortillas. Roll burritos and serve.

    Made this last night, it was great!! Chopped up the chx ahead of time to stir fry and used diced tomatoes with onion and garlic. Added hot pepper flakes and Sazon seasoning. Also made quacamole and servied sour cream. Delicious!! - 9/10/08

    Very Good
    A little bland but we spiced it up with cumin and hot sauce. I cooked the chicken on the grill to avoid the oil and butter. I would definitely recommend this one. - 9/11/08
