    180 grams Roasting Chicken, light meat
    45 grams Walnuts
    25 grams Parmesan Cheese, grated
    4 tbsp Mayonnaise, regular (mayo)
    1 tbsp Balsamic Vinegar
    1.4 tsp nutmeg
    1/4 tsp salt

Tips

Great way to use up leftover rotisserie chicken


Directions

Chop chicken, walnuts and mix with parmesan, mayonnaise, balsamic, salt and nutmeg. Chill.

Serve on a bed of lettuce

Serving Size: Makes two big lunches
