Recipe Credit: Nora Taylor
Directions
1. Cover and soak cashews for 15 minutes in boiling water. Use a kettle for boiling the water.
2. While waiting for the cashews to soak, add the rest of the ingredients to your blender (minus the dill). Save the dill until the end otherwise your dip will turn green.)
3. Drain the cashews and add to the blender and blend well until you get a smooth consistency.
4. Once you receive a smooth consistent blend, add the dill and pulse for a few seconds just until the dill is blended.
5. Serve on salad or with fresh vegetables for dipping.
6. This will keep in the fridge for a week
TIPS
1. If you don't have or don't like dill, you can substitute parsley (1/3 c chopped or 2-3 teaspoons dried).
2. For Sriracha Ranch, add 2-3 teaspoons Sriracha, or to taste when blanding.
Serving Size: Makes approx. 2 cups of dip
