Ingredients

    8 oz Philadelphia Cream Cheese
    8 large Eggs, raw
    3/4 cup, about 78 grams/ 2.5 ounces) Original Pork Rinds, finely ground/ powdered.
    2 tsp Baking Powder (no corn starch!)
    1 tsp Baking Soda
    1/2 tsp Cream Of Tartar
    1/2 tsp. Better Stevia liquid extract liquid (about 8 servings equiv.)
    1.5 tsp Vanilla Extract
    1 tsp. Pure Almond Extract
    2.5 Tbsp Nutiva Shortening (organic red palm & coconut oil blend)
    (using 1/2 tsp. per pancake for cooking)

Tips

Certainly NOT a recipe to use daily, but an unexpected treat for a leisurely brunch. Omit stevia and extracts for a savory pancake. Omit leavening for a more crepe-like pancake.


Directions

Warm whole eggs & soften cream cheese. (Can use Oven heated to 170 degrees, then turned off; leave items for about 20-30 minutes).
Using immersion blender and narrow mixing bowl, beat cream cheese at low speed until smooth. Add eggs, 2 at a time, blending thoroughly at medium speed. Add stevia and extracts, blend again.
Add powdered pork rinds, baking powder, baking soda, and cream of tartar; stir to combine.
Let bowl sit, covered, for 10-15 minutes to allow pork rinds to absorb liquid, and leavening to activate.
Blend again at medium speed until batter is smooth.
Heat skillet over medium high heat until hot.
Add 1 tsp. Nutiva shortening, heat until melted & sizzling. Use 1/4 cup measure to scoop batter into skillet;, making two pancakes per batch. Cook until golden brown; flip once.
When done, remove from skillet to large oven safe plate. Keep pancakes in warm oven while completing preparation.
May be served with butter (Count amount used!). Excellent with bacon or sausage for a leisurely brunch.


Serving Size: Makes 16 pancakes; 1 serving = 2 pancakes
