My sister-in-law sent this recipe to my husband when he was diagnosed with diabetes. He absolutely loves it and it doesn't raise his glucose levels. Ingredients

1\2 cup Butter (1 stick softened)
2 Tbsp Splenda
1 Egg
3 cups unsweetened applesauce (24 oz. jar)
1 tsp vanilla
2 cups flour
2 tsp baking soda
1\2 tsp cinnamon
1\4 tsp cloves
1 cup chopped dates (or raisins)
1 cup chopped pecans
Directions
Preheat oven to 350 degrees.
In a large mixing bowl, cream together softened butter and splenda until smooth. Add egg and beat until well mixed. Add applesauce and mix until blended. Combine dry ingredients and gradually add to mixture while mixing. Stir in dates and pecans.
Pour into 13 x 9 inch ungreased baking dish and bake for 1 hour. Makes 12 3-inch servings.
