Ingredients

Chicken Breast, no skin, 10 ounces (2 small breast halves)
Cooking spray
Parmesan Cheese, grated, 2 tbsp
College Inn Chicken Broth - 99% Fat Free, .25 cup
Broccoli, fresh, 1 stalk (cut into pieces)
Cheddar or Colby Cheese, Low Fat, .25 cup, shredded
Directions
Cut chicken into bite-sized pieces (about 1/2 - 1 inch). In a ziploc baggie put the parmesan cheese and then put all the chicken pieces in the bag. Zip the bag shut and shake - being sure to coat all the pieces.
Steam the broccoli just slightly (5 min. on a stovetop) while you are cooking the chicken.
In a skillet over medium heat, spray cooking spray and add the entire contents of the baggie. Brown the chicken slightly over about 5 minutes time and then add the chicken broth. Cover and simmer for 10 minutes.
In 2 single serving bowls divide the steamed broccoli. Sprinkle each serving generously with the grated cheddar cheese. Finish off by pouring the chicken mixture evenly over each serving.
A quick, easy, and low carb meal!
