Ingredients

    2 ears fresh corn
    1 sweet bell pepper
    1/2 to 1 cup red onion

    2 tsp. olive oil
    2 tsp. balsamic vinegar
    1/2 tsp. dried oregano

Directions

Grill corn until beginning to brown. About five minutes. Remove kernels.

Grill onions until soft. About three minutes. Chop

Grill peppers until skins are charred. About five minutes. Allow to cool, then peel and slice.

Mix all ingredients in bowl and chill.

    I made this tonight, only instead of a green pepper, I used a green, yellow, orange, and red pepper..it was beautiful and colorful and delicious! - 6/2/09

    Incredible!
    I used the broiler for the corn (wrapped in foil) and charred the peppers and onions in broiler as well. Everything came out perfect. This recipe was wonderful. - 10/16/08
