Introduction

This is a fast recipe and very tasty when made with my Lemon-Honey Sauce Recipe and Low-Fat Parmesan Polenta.

Ingredients

    Pork Tenderloin:
    1/4 cup balsamic vinegar
    1 tablespoon whole grain mustard
    1 pound pork tenderloin, trimmed
    salt and pepper

Directions

Prepare Pork Tenderloin:
1 Whisk balsamic and mustard together in a shallow baking dish. Add
tenderloin, turn to coat and marinate at least 10 minutes.

2 Remove pork from the marinade (reserve it for basting) and season
with salt and pepper.
3 Place tenderloin on the grill, cover and cook 10 minutes.
4 Brush pork with the marinade, then flip it and brush again.
5 Cover and cook 10 more minutes or
until pork registers 160F on an instant read thermometer .
6 Let pork rest 5 minutes, then slice into eight 1"-thick pieces (4 oz. servings.)
