Ingredients

    1 - 213 g can wild red salmon
    2 cups water
    1 medium sweet potato, peeled and diced into small pieces
    2 medium carrots, peeled and diced into small pieces
    1/2 onion, diced
    3 cups rice milk (Rice Dream)
    1/2 cup finely chopped fresh dill
    1 tsp salt
    6 tbsp cornstarch


Directions

1. In a pit, bring water, sweet potato, carrots and onion to boil, then reduce to medium-high heat, cover, and cook until vegetables are soft. About 10 minutes.
2. Add rice milk and bring to a boil.
3. Remove skin and bones from canned salmon.
4. Add salmon to soup.
5. Mix cornstarch with just enough cold water to dissolve and add to soup. Bring soup to boil while stirring, and allow mixture to thicken for 1-2 minutes.
6. Remove from heat and serve warm.
