Introduction

Crab cakes using imitation crab. Crab cakes using imitation crab.
Number of Servings: 8

Ingredients

    2 eggs, beaten
    ½ cup plain dry bread crumbs
    ¼ cup lemon juice
    ¼ sliced green onion
    ½ tsp dry mustard
    ½ lb imitation crab, flaked
    Additional crumbs
    2 Tbsp Canola oil

Directions

In medium bowl, combine eggs, ½ cup bread crumbs, lemon juice, onions and mustard; fold in crab.
Shape into 8 patties ; coat with additional crumbs.
Coat a non stick skillet with 2 Tbsp of canola oil oor with no stick spray.
Brown patties on both sides. Refrigerate leftovers.
