Introduction

Wanted something tasty to go over my brown rice. This is what I came up with! Wanted something tasty to go over my brown rice. This is what I came up with!

Ingredients

    1/2 cup Sierra Miguel canned black beans, drained and rinsed well
    2 tbsp raw chopped onion
    1 tbsp each of red, yellow, & green bell pepper
    1 clove garlic
    1/8 tsp low salt
    1/8 tsp ground black pepper
    1 med. red tomato sliced into chunks

Directions

Combine all ingredients into small pan, may use EVOO(nt included) to keep from sticking. Cook over low heat until warmed thourghly. I added in some ground cumin for extra spicy flaver, but this is optional. Cumin is defintly an aquired taste!

I served this over brown rice with a broiled whiting fillet! Happy Eating!
