Ingredients

    Salad

    Black Beans, 19 oz. can, rinsed
    Sweet Corn, Fresh, 1 cup, about 2 cobs
    Red Ripe Tomatoes, 1 cup, seeded and chopped
    Sweet red onion, raw, 1/2 cup, chopped
    Green Peppers, 1/2 cup, chopped
    Radish, Fresh, 1/2 cup
    Zucchini, 1 cup, sliced
    Avocado, 1, cubed

    Dressing
    Lime Juice, 1/4 cup
    Chili powder, 1/2 tbsp
    Extra Virgin Olive Oil, 1 1/2 tbsp
    Salt, 1/2 tsp
    Cumin, ground, 1/2 tsp
    Honey, 1 tsp
    Jalapeno Pepper, 1 pepper, seeded and minced
    Garlic, 2 cloves, minced

Directions

Combine all salad ingredients in a large bowl. Add the avocado last, to avoid it getting mushy and brown.

Combine all the dressing ingredients with a whisk and pour over the salad. Toss gently. Add cilantro to taste if you would like.

Serves 4-6 as a main dish.
