Ingredients

    Muffin Ingredients:
    3 cups flour
    1 cup sugar
    1 tbsp cinnamon
    1 tsp baking soda
    1/2 tsp salt
    2 cups diced bananas (about 3 very ripe ones)
    1 1/2 cups unsweetened apple sauce
    1 cup crushed pineapple
    3 eggs
    1 tsp vanilla extract

    Topping Ingredients:
    1 tbsp lemon juice
    1 cup powdered sugar

Directions

Muffins: Mix dry ingredienets. Add bananas and toss to coat. Add wet ingredients. Stir with spoon to moisten. Bake at 350 for approximately 30 minutes, depending on your altitude and the type of muffin pans you are using. Makes around 20 muffins. Keep them in the refridgerator to keep the bananas good.

Topping: Mix powdered sugar and lemon juice. Make sure that the muffins have cooled before applying topping, as it will run off the sides if they have not.

    The recipe itself does not list a cup of sugar although the Ingredient Detail does. Is that correct ? - 6/14/09

    Actually it's the second ingredient on the list. It could probably be made without extra sugar, however - the fruit is pretty sweet.

    Thanks for the recipe. I did make some changes using half white and half wheat flour; substituting Splenda white and brown sugars; adding nutmeg; replacing eggs with egg whites and flaxseed. - 10/1/08
