Introduction
Simple but yummy fruit salad Simple but yummy fruit saladNumber of Servings: 6
Ingredients
-
1 can (20 oz.) pineapple tidbits, drained
1 can (10.5 oz.) mandarin oranges with no sugar added
1.5 cups green grapes
1 cup mini marshmallows
1/2 cup flaked coconut
1 carton (8oz. or 6oz, either one. I used 8 oz, of a 100 calorie yogurt by fred meyer, but other brands come in 6 oz and are more calories) vanilla yogurt
1/4 cup chopped pecans, toasted
Directions
In a serving bowl, combine the pineapple, oranges, grapes, marshmallows, and coconut. Fold in the yogurt. Cover and refrigerate for at least 1 hour. Just before serving, stir in pecans.
Makes 6 servings, 3/4 cup per serving.
Note: to toast pecans, spread them in a single layer in a shallow baking pan or a cookie sheet. Bake in a 350 degree oven for 5 to 10 minutes or until light golden brown, watching carefully and stirring once or twice so they don't burn. Be careful, they are easy to burn! It's very important to stir to keep from cooking unevenly. Some will be burnt and some not toasted!
