Ingredients
-
8 oz. of pasta (linguini, rotini, spaghetti)
2 tsp. olive oil
2 garlic cloves, minced
1/2 cup onion, diced
1/2 cup green pepper, diced
15 oz. can of diced tomatoes in juice
15 oz. can of tomato sauce
1 lb. shrimp, cooked (deveined)
2 Tbsp. basil
1 tsp. red pepper flakes, if desired
Directions
Cook pasta according to package directions.
While pasta is cooking, heat oil in large non-stick skillet. Add garlic, onion, and green pepper, cooking until onion is translucent and peppers are soft. Stir in diced tomatos (do not drain) and tomato sauce, basil, and red pepper flakes (if desired). Simmer for 10-15 minutes at low heat until sauce reduces some and thickens. Stir in cooked shrimp and heat until warmed throughout, approx. 4-5 minutes.
To serve: Place pasta serving on plate and top with shrimp and tomato sauce mixture.
Optional: You can use fresh basil instead of dried. If so, you might top each place with the fresh chopped basil instead of adding it to the sauce earlier.
