Introduction

I took another recipe I found here and ran with it to make it my own. I think it's a fantastic substitute when you're craving pizza or pasta. I took another recipe I found here and ran with it to make it my own. I think it's a fantastic substitute when you're craving pizza or pasta.

Ingredients

    1/4 cup onion, diced
    1/4 mushrooms, diced
    2 cups zucchini, sliced
    3 ounces lean ground beef
    1/2 cup spaghetti sauce
    1/4 cup reduced-fat Italian cheese blend

Directions

Preheat oven to 375 degrees F.

In small saute pan, cook onion, mushrooms and zucchini until starting to soften. Add beef; cook until browned. Add spaghetti sauce and mix.

Transfer to small baking dish (I used the Pampered Chef stoneware baking bowl). You can either layer the cheese between and on top of two layers of the veggie/beef mixture or put all the cheese on top. (I layered.)

Bake for 20 minutes, then serve and enjoy.
