Ingredients

7 whole-wheat lasagna noodles
16 oz. tub lowfat cottage cheese
2 cups Morningstar Farms Sausage-Style Recipe Crumbles
24 oz. jar tomato-basil pasta sauce (lowfat)
1.5 cups shredded 2% mozzarella cheese
3 tbsp shredded parmesan cheese
Directions
This recipe does NOT involve boiling the noodles. Increase prep time to allow for boiling the noodles first if you are not pre-assembling the lasagna several hours before baking.
Serves 6
1. Saute the Morningstar Farms sausage crumbles until thawed out.
2. Spray an 8x8 glass dish with nonstick spray. Spread 1/4 cup pasta sauce in the bottom.
3. In a bowl, mix together about 1/2 the remaining pasta sauce with the cottage cheese and the sausage crumbles.
4. Break the lasagna noodles to fit into the 8x8 dish (you will use the broken-off pieces too). Place 3 rows of noodles/noodle pieces over the sauce in the bottom of the pan. Spread 1/2 of the cottage cheese/sauce/"sausage" mixture over the noodles and sprinkle with 1/2 cup mozzarella cheese. Repeat layers one more time.
5. Place remaining 3 rows of noodles/noodle pieces. Top with remaining pasta sauce, remaining 1/2 cup of mozzarella, and 3 tbsp parmesan cheese.
6. Cover and place dish in refrigerator for 4-10 hours. Preheat oven to 375 degrees; bake lasagna for 35-40 minutes or until bubbly. Let sit for 5 minutes or so before serving.
