    1 tuna steak, broiled and cut in chunks
    1 can great northern or white beans, drained and rinsed
    1 cucumber, cut in chunks
    2 cups grape tomatoes, cut in half

    2 tbs walnut oil
    juice of 2 lemons
    zest of 1 lemon
    2 tbs dijon mustard


Cook tuna (or use leftover from previous meal)

drain and rinse one can of white beans.

In large bowl, whisk mustard, lemon juice, lemon zest and oil - til mixed

Add cucumber chunks, tomato chunks, and tuna

Chill slightly
