Ingredients

    1 lb. skinless boneless chicken breast
    3/4 cup feta cheese - crumbled
    1 tbsp lemon juice
    1/4 cup chopped red bell pepper
    1 tbsp parsley - dried
    1/4 tsp black pepper

Directions

Preheat oven to 350 Place chicken breast in baking dish. Drizzle with half of lemon juice, season with pepper. Top with cheese, red bell pepper and parsley. Drizzle remaining lemon juice, Bake for 35 to 40 minutes or until chicken is cooke through. Makes 4 servings

    Incredible!
    This was excellent! I had marinated my chicken for 45 minutes in greek salad dressing prior to finding this recipe. I omitted the bell pepper and parsley but added oregano and basil. This will definately be part of our regular rotation, thank you! - 2/8/13

    This was incredible! The chicken was so moist and delicious! I agree that it would prob be great with some sundried tomatoes, maybe some kalamata olives. It cooked an additional 10-12 mins or so than it said. I used basil instead of rosemary, sundried tomato and basil feta and a whole bell pepper. - 2/8/11
