Ingredients

    Pizza crust:
    2 c. whole wheat flour
    1 pkg. instant yeast
    1 tsp. salt
    1 tsp. sugar
    1/2 cup instant oats
    1 - 1 1/2 c. water

    Toppings:
    5 oz. canned chicken breast, drained
    1 small bell pepper, sliced
    1 jalepeno pepper, minced
    1/2 onion, sliced
    1 roma or plum tomato, sliced
    2 cloves garlic, minced
    1/2 c. your favorite bbq sauce (I use KC Masterpiece Hot n' Spicy)
    3/4-1 c. shredded mozzarella or pizza cheese
    1/4 c. fresh grated parmesan cheese

Directions

To mix dough, combine dry ingredients, then add water. Knead until dough consistency, divide in half. (Store one half in the freezer for later use! Thaw at room temperature for a couple hours when you're ready to use it.)


Roll or flatten the dough to desired thickness (use a rectangular cookie sheet for thinner crust, a round pizza pan or stone for thicker crust), adding flour as necessary. Press into a pan sprayed with cooking spray (I flatten it directly in the pan). Prick the crust generously with a fork. For crispier crust, pre-bake the crust for 5-10 minutes on the lowest rack in the oven, at 425 degree oven.


Spread bbq sauce on crust, then top with the rest of the toppings. Finish with fresh grated parmesan.


Bake on the lowest rack in the oven at 425 for 15 minutes or until cheese is melted and browned/crisped as desired.


Makes 8 slices (calorie count is for one slice - I have two!).
