Ingredients

    1 large avocado, w/o peel & pit, cubed
    1 lb salad shrimp, cooked
    1 red onion, diced
    8 roma tomatoes, w/o seeds, diced
    1 jalapeno pepper, w/o seeds, diced fine
    1/2 bunch cilantro
    juice of 1 lemon
    4 servings baked tortilla chips
    1 cup salsa

Directions

Combine all ingredients. Chill. Serve with Tortilla chips and salsa

    Love this recipe! Started making it when I first discovered M Hyman's Blood Sugar Solution. Tip for solo diners: A full batch san avocados will keep for three to five days. Then simply add the avocados each time you eat. This way, a single prep session pays you back with 4 lunches! - 12/23/12
