Introduction

Ingredients

    4 egg whites, scrambled
    2 T Hormel bacon bits
    1/4c chopped onion
    1/2 10oz pkg chopped frozen spinach, defrosted and remove excess liquid
    8 to 10 cherry tomatoes, diced
    1/4c shredded low fat cheddar cheese

Directions

*Defrost spinach and remove excess liquid. Divide in half and put in bowl. Add bacon and tomatoes. Scramble egg whites and add to mixture. Preheat small fry pan, spray with non-stick spray and add onion. Sautee one minute, add mixture and place lid on pan turning heat down very low. Cook very slowly until eggs whites firm, then add cheese, melt and serve.

*Place defrosted spinach in a kitchen towel and wring or twist to remove excess liquid.
