Ingredients

3/4c Lentils
4c Pacific Natural Foods Organic Low Sodium Vegetable Broth
4c Pacific Natural Foods Organic Vegetable Broth
18 Baby Carrots, raw,
9 Celery stalks, raw,
3 Sweet peppers, Yellow, Red, Green
2 Sweet potatoes, no peel
1 tbl Cumin
2 tbl Pepper, black
1 tsp Olive Oil
.5 Onions, raw,
Salt, 3 dash
Directions
Place lentils in bowl and cover with water to soak while....
Using food Processor dice all veggies except onion.
Dice onion.
In dutch oven heat olive oil and sweat onions.
Add broth, black pepper, salt, and cumin. Bring to boil.
Turn heat to medium and add veggies and potatoes then stir. Add lentils and reduce to slight boil just above a simmer. Cover and cook for 25-30 minutes till everything is tender. Take stick blender and pulse soup 10 times around the pot. Stir with spoon and eat when at temp you wish.
