    6.5 cups of Water
    1 tbsp Bay leaves/2 whole leaves
    10 Medium Carrots raw and sliced
    4 Medium Onions, sliced
    2 Medium Potatoes, sliced
    2 tsp Granulated White/Brown Sugar
    50g Sour Cream Fat Free
    Dash Salt
    Dash Black Pepper freshly ground
    1 tbsp Freshly ground Nutmeg


Makes 8 1-cup servings.

Bring water to the boil. Add bay leaves and all the vegetables. Simmer for 45 minutes.

Remove the bay leaves, then purée all the vegetables with the water in a blender. Add the sugar and sour cream and heat over low flame until piping hot. Season to taste.

Add the nutmeg as a garnish.
