Ingredients

Butter Beans, Master Foods canned 400g or haricot beans, or any other white beans
Olive Oil, 2 tbsp
Pork, fresh, cubed, 1.410 lb
Bacon, cubed, 175 grams
Rosemary, dried, 1 tbsp
Guinness Draught 440 ml, 1 serving
Chicken stock, home-prepared, 1.392 cup
Tomatoes, canned, chopped, 400g
Brown Sugar, 2 tsp unpacked
Onions, raw, 1 medium (2-1/2" dia)
Directions
Heat half the oil in a large, deep saucepan. Add the pork and cook, stirring, until lightly browned all over. Remove to a plate.
Either warm up your crock pot, or heat oven to 120C (250F). Heat remaining oil, then add bacon and rosemary. Stir well, then mix in the browned pork with the Guinness, stock, tomatoes and sugar. Bring to the boil, then remove from the heat.
Transfer to crock pot or casserole dish, and cook for 4 hours. Half an hour before serving, stir in the drained and rinsed white beans (if using dried beans, make sure you soak them overnight first, and add them to the casserole at the same time it goes into the oven instead of at this point). Add salt and pepper to taste, just before serving with green beans and crusty bread.
