Introduction

This is a gorgeous soup, the green colour put my family off when I first made it but now even the kids love it. You can make this with fresh spinach or 3-4 blocks of frozen spinach. Number of Servings: 4

Ingredients

    1 Onion, medium, chopped
    1 Potato, medium, chopped
    1 Zucchini/Courgette, large, chopped
    1 packet of fresh Spinach, or 3-4 blocks of frozen spinach
    2 pints of Chicken or Vegetable Stock
    1 tbsp Vegetable Oil
    Salt and Pepper

Directions

This is really easy to make and will feed 4 people.

Prepare all the vegetables, heat the oil in a large pan and add the onion and zucchini/courgette until the onion is transparent.

Add all the other ingredients and bring to the boil.

Cover and simmer for 30 minutes.

Blend until smooth.

It really is that easy and freezes beautifully.

Serve with croutons and if you're having friends over you can swirl a tsp of cream or creme fraiche in each bowl before you serve.
