Introduction

My mom hates to wast food so she got the idea to use the ends of the Asparagus to make a soup. My mom hates to wast food so she got the idea to use the ends of the Asparagus to make a soup.

Ingredients

    End of Asparagus you don't use for dinner
    16oz Chicken Broth
    Clove of Garlic
    Some Parsley
    3 Dried Tomatoes
    0.5 Cups Celery Chopped
    1 Chicken Bouillon Cube
    Salt and Pepper to taste
    a dash of basil
    a dash of dried red pepper flakes
    1 cup sour cream

Directions

Makes 4 servings

Cook asparagus, chicken broth, garlic, parsley, dried tomatoes, celery, chicken bouillon cube, black pepper, basil and hot pepper flakes in a medium size pan on medium heat. Once the asparagus is soft put it through a blender until pureed. Put back into pot and stir in sour cream. Once sour cream is blended soup is ready to serve.

My mom cooks by site and not measurements so the amount might be a little off. Play with it until it taste right to you and enjoy.
