Introduction

Number of Servings: 4

Ingredients

    1 Can of yellow corn, drained
    1 Pound of potatoes peeled & chopped (about 3 medium)
    1 1/2 Cups Chicken Broth
    1 Cup Carrots, sliced
    1/2 C Celery, chopped
    1/2 C Onions, chopped
    1 tsp ground thyme
    3/4 tsp ground pepper
    1 tsp salt
    1 Cup 2% Milk
    2 Tablespoons Flour

Directions

Combine half of the chopped potatoes with the chicken broth in a saucepan. Bring to a boil and cover, cook until tender. Mash the potatoes with the broth. Add the carrots, onions, corn, celery, spices, and remaining potatoes, cook until tender. Combine 1/4 milk with the flour and mix well. Add that mixture and the remaining milk to the soup and cook, stirring constantly until soup thickens.

Makes 4 servings.
