Ingredients

    1/8 tsp. black pepper
    1/4 tsp. salt
    1/4 cup flour
    4 chicken breasts, boneless, skinless
    1 tbsp. olive oil
    1/2 cup Marsala wine
    1/2 cup chicken stock, fat skimmed from top
    1/2 lemon - fresh lemon juice
    1/2 cup sliced fresh mushrooms
    1 tbsp. fresh parsley, chopped

Directions

1. Mix together pepper, salt and flour. Coat chicken with seasoned flour.
2. In a heavy-bottomed skillet, heat oil. Place chicken breasts in skillet and brown on both sides. Then, remove chicken from skillet.
3. To the skillet, add wine, and stir until heated. Add lemon juice, stock, and mushrooms. Stir to toss, reduce heat, and cook for about 10 minutes until sauce is partially reduced.
4. Return browned chicken breasts to skillet. Spoon sauce over the chicken.
5. Cover and cook for about 5 to 10 minutes or until chicken is done. Serve sauce over chicken. Garnish with chopped parsley.

    My husband went on and on about this recipe. I will be making it again. We both enjoyed it very much. I used whole wheat flour and the sauce had a wonderful flavor. I also added some fresh garlic. This really turned out well. - 1/12/13
