Ingredients

1 lb ground turkey
2 cups picante sauce
1 pkg frozen chopped spinach (well squeezed)
2 tsp ground cumin
1/2 tsp salt
1 pkg 8(oz) Fat Free cream cheese cubed
12 7" low carb whole wheat tortillas
1 can 14.5 diced tomatoes in juice
1 cup 4(oz) low fat cheddar cheese
TOPPINGS:
12 tbsp sour cream
3-4 cups shredded lettuce
Directions
Brown turkey in large skillet add 1 cup picante sauce, the package of thawed squeezed spinach, 1.5 tsp cumin , and 1/2 tsp salt. Cook and stir 5 minutes or until most of liquid is gone. Add cream cheese stir until just melted. Remove from heat.
Spoon about 1/3 cup of filling down the center of each tortilla. Roll up and place seam side down in lightly greased baking dish
Combine remaining cup of salsa and 1/2 teaspoon of cumin mix well and spoon over enchiladias. Bake at 350 degrees for 15 minutes remove from oven sprinkle cup of cheese over top of enchiladias return to oven for 2-5 minutes or until cheese is melted.
Makes 12 large servings or 24 smaller servings.
My family loves this served with shredded lettuce and a dallop of sour cream. the nutritional info includes the toppings.
