Ingredients

    2 c Egg Beaters or other egg substitute
    4 large eggs
    2 c shredded sharp cheddar cheese
    1 - 12oz package cooked breakfast sausage
    1/2 c milk
    2 c frozen o'brien potatoes
    1/2 tsp salt
    1/2 tsp pepper
    1 Tbs dried parsley
    1/2 tsp onion salt

Directions

This makes about 8 1-cup servings.

Spray the inside of your crock pot with Pam to help prevent sticking.

Place the frozen o'brien potatoes at the bottom of the crock pot. Cut up each of the sausages into thirds and place those on top of the potatoes. Then add the shredded cheese.

In a separate bowl lightly beat the eggs, milk, and spices. Pour this mixture into the crock pot.

Turn it on high and stir it about every 10 - 15 minutes during the approximate two hour cooking time. You will want to stir more often once the liquid is mostly gone.

Enjoy!

One options is to do this the night before by keeping your crock pot on low, but I never like leaving my crock pot on at night so I don't. But it is an option.
