Ingredients

    1 pkg (4 servings)size sugar-free vanilla pudding mix
    1 3/4 cups orange juice
    1 container (8 oz) vanilla or pineapple low-fat yogurt
    3/4 cup coarsely crushed ginger snaps

Directions

In bowl, prepare pudding mix according to package directions, using orange juice instead of milk. Cover surface with plastic wrap and chill thoroughly.

Before serving, fold yogurt into pudding.

Divide 1/3 of pudding mixture among 6 glasses. Spread with half of the crushed ginger snaps. Repeat pudding and cookie layers. Top with remaining pudding mixture.

Can be garnished with orange peel or mint sprig.
