Introduction

We had extra peppers from the garden that were really small and a few potatoes so my husband desided I should make this. I then got a few one more pepper from the guy up the street and viola...Yum! The chicken broth gives a little bit of flavor and allows for less fat. This makes 4 servings of 1 cup each. Ingredients

    -1 pound red potatos diced skins on
    -1/2 c 99% fat free chicken broth like Aldi's Fit and Active
    -1 1/2 c chopped onion (I use white)
    -6 oz chopped green peppers
    -salt and black pepper to taste

Directions

Dice your potatos and then rinse and drain them. put in a large skilled with your chicken broth and cover. Bring to a boil. Remove cover and lower heat to med/low and cook until chicken broth is absorbed, STIRRING OFTEN so they don't stick. Add the greed peppers and onions and continue to stir and cook until crisp tender seasoning with salt and pepper to taste.

Makes 4 servings of 1 cup each.

We ate this with eggs as well. I topped mine with cheese and salse ****eggs, cheese and salsa are not in the nutritional values*****
