Introduction

Super easy and delicious rice and beans. I usually make a bunch of rice on Monday nights and refridgerate the rest for the whole week. High in fiber, high in flavor. Ingredients

    1 Tbsp Olive Oil
    2 chopped Garlic cloves
    1 cup chopped onion
    1 cup tomato sauce
    1 can drained red kidney beans ( about 1 cup)
    2 cups prepared long grain brown rice
    2 tbsp. chili powder
    1 tsp. ground cumin
    3 tsp. Lawrys Original seasoned salt ( or taco seasoning)
    .5 cup shredded Chedder Cheese
    .5 cup shredded Colby Cheese
    4 tbsp. Lowfat sour cream


Directions

1. Saute garlic and onion in olive oil
2. add in tomato sauce
3. add in kidney beans and stir
4. stir in rice
5. stir in chili powder, cumin and seasoned salt
6. keep stirring about 5 minutes.
7. stir in colby and american cheeses, stirring until cheeses are melted.
8. serve with a dallop of sour cream.
