Introduction

This is a simple creamy soup. I also add a few leaves of fresh oregano for taste. This is a simple creamy soup. I also add a few leaves of fresh oregano for taste.

Ingredients

    2 large potatoes, peeled and diced
    2 c water
    1 large onion, chopped
    1/4 c butter
    1/4 c white whole wheat flour
    1 tsp salt
    1 tsp fresh thyme, chopped
    1/4 tsp pepper
    1 1/2 c milk

Directions

Put potatoes and water in a large saucepan and cook until tender. While this is cooking, melt butter and saute onion until tender. Stir in the flour, salt, thyme, oregano ( if using) and pepper.

Gradually add milk. Bring to a boil. Cook and stir for 2 minutes. Add to potatoes and water. Serve
